WINEMAKING AT CHECKERBOARD VINEYARDS

On harvest mornings, perfectly ripened vines are flagged for hand-harvesting. Clusters are carefully placed in small bins and delivered to the winery crush pad. Clusters are sorted first, discarding any imperfect ones. The remaining clusters are gently de-stemmed and the resulting berries are individually selected for fermentation.
